USDA's Food Safety and Inspection Service ("FSIS")
issued an updated version of the Agency's compliance guidelines
for controlling hazards posed by allergens and other ingredients of
public health concern. The guidelines provide recommendations for
identifying hazards when conducting a hazard analysis and for
preventing and controlling hazards through a hazard analysis and
critical control point plan, or sanitation standard operating
procedures, or other prerequisite programs with respect to these
substances.
